Сыроедческие Черничные Пирожные с Тимьяном

Невероятно нежные пирожные, объединяющие в себе чернику и свежий тимьян. Очень вкусные и эффектные. Без глютена и рафинированных сахаров.

Ингредиенты

ДЛЯ ОСНОВЫ:
100 г мягкой кураги (сушеных абрикосов)
1 стакан орехов пекан
щепотка морской соли
ДЛЯ НАЧИНКИ:
2 стакана орехов кешью, замоченных минимум на 4 часа и промытых
0,25 стакана кокосового масла, растопленного на водяной бане
6-8 столовых ложек сырого меда или сиропа агавы
0,25 стакана овсяного или миндального молока, в случае необходимости
сок 0,5 лимона
1 чайная ложка ванильного экстракта
0,5 стакана черники
горсть свежих листьев тимьяна
ДЛЯ ТОППИНГА:
черника, свежий тимьян

Рецепт

Застелить форму для выпечки размером примерно 45 х 18 см пергаментной бумагой и убрать в сторону.

Поместить все ингредиенты для основы в кухонный комбайн или скоростной блендер и измельчить до получения не распадающейся массы. Выложить массу в подготовленную форму, разровнять и уплотнить.

Поместить все ингредиенты для начинки за исключением черники и тимьяна в кухонный комбайн или скоростной блендер и измельчить до получения однородной массы. В случае необходимости добавить немного растительного/орехового молока для облегчения процесса измельчения, стараясь максимально сохранить густоту начинки.

Вылить около трети начинки в форму и как можно равномернее распределить ее по основе.

Добавить в кухонный комбайн/блендер к оставшейся части начинки чернику и тимьян и еще раз измельчить. Подкорректировать количество специй по вкусу.

Вылить полученную смесь поверх первой части начинки и распределить ее как можно равномернее ложкой или лопаточкой, стараясь не смешать слои.

Украсить заготовку черникой и убрать в морозильник на 2-3 часа или до полного застывания. Достать застывшую заготовку из формы, нарезать, присыпать листьями тимьяна и подавать.

Хранить в холодильнике.

      Почему же? Сыроедение — это как если б мы в природе еду находили. Зимой яблоки или ягоды на ветках замерзшие висят.
